Cranberry and Pistachio Energy Bites Recipe

Ingredients
  

  • 1 cup dates
  • 1 cup dried cranberries
  • 1 cup unshelled pistachios
  • 1/2 teaspoon sea salt
  • 1 teaspoon maple syrup
  • 1/2 cup honey
  • 1/4 cup chia seeds
  • 1/4 cup currants or use your favorite dried fruit
  • 1/2 cup packed brown sugar
  • 2 cups instant oats

Instructions
 

  • Add dates, cranberries and pistachios to the bowl of your food processor and pulse a few times to roughly chop.
  • Transfer ingredients to a bowl and add salt, maple syrup and honey and mix well.
  • Mix in chia seeds, currants and brown sugar.
  • Add in the oats and mix very well with a sturdy spoon or with your hands.
  • Place the bowl into the fridge for about an hour to firm up the mixture. This makes rolling it into balls much easier.
  • Using a small scoop, scoop out the mixture and roll into 1” balls. Store in an airtight container in the fridge for up to 2 weeks or for up to 3 months in the freezer.
