Add dates, cranberries and pistachios to the bowl of your food processor and pulse a few times to roughly chop.
Transfer ingredients to a bowl and add salt, maple syrup and honey and mix well.
Mix in chia seeds, currants and brown sugar.
Add in the oats and mix very well with a sturdy spoon or with your hands.
Place the bowl into the fridge for about an hour to firm up the mixture. This makes rolling it into balls much easier.
Using a small scoop, scoop out the mixture and roll into 1” balls. Store in an airtight container in the fridge for up to 2 weeks or for up to 3 months in the freezer.
