Thai Peanut Chicken Wings

Peanut Butter and Jelly Chicken Wings

Peanut Butter and Jelly Chicken Wings are a little sweet, a little spicy and a lot of fun. If you love chicken wings then you'll want to fire up your grill and make these delicious wings tonight!

Ingredients
  

  • 4 lbs chicken wings trimmed and patted dry
  • 1 tsp black peppercorns ground
  • 2 tbsp brown sugar
  • 2 tbsp honey
  • 1/4 cup peanut butter
  • 2 tsp Pit Boss Sweet Rib Rub
  • 1/2 red onion minced
  • 1/2 cup strawberry preserves
  • 1 tbsp Thai chili sauce
  • 1/4 cup Worcestershire sauce
  • 10 oz peanuts whole

Instructions
 

Marinade

  • In a mixing bowl, whisk together strawberry preserves, peanut butter, Worcestershire sauce, brown sugar, honey, Thai chili sauce, minced onion, Sweet Rib Rub, and black pepper.

Cooking Instructions

  • Place chicken wings in a large zip-top bag, large bowl or container. Pour marinade mixture over chicken, seal or cover, and keep cold for about 2 hours. Fire up whatever you are cooking on and preheat to 400 degrees F or medium to high heat. Place wings directly on the grate, over indirect heat, and cook for approximately 30 minutes or until cooked through rotating wings every 5 minutes. Meanwhile, place whole peanuts on griddle or baking sheet, turning occasionally with a metal spatula for 5 to 7 minutes, to lightly roast. Remove wings from grill and allow to rest for 5 minutes. While wings are resting, shell the peanuts, and transfer to a resealable plastic bag. Use whatever is available (tent pole mallet, can, rock, etc.) to crush the peanuts, then scatter peanuts on top of the chicken wings.
  • Serve warm!
