Should I sleep a few extra minutes or should I eat breakfast? That is a choice I am faced with almost daily. I like to sleep until the last possible moment but that usually means I have to forego breakfast in order to do so. What I really need is a few quick and easy healthy breakfast ideas.
Breakfast is often touted as the most important meal of the day. I know I feel better when I eat breakfast. I can also lose and maintain my weight easier when I eat breakfast. But…sleep.
So, here is a roundup of some of my favorite quick and easy breakfasts that you can make ahead or make in a jiffy so you can sleep in and still enjoy the most important meal of the day!

Fiesta Veggie Bagel
The Fiesta Veggie Bagel is Gina’s take on that old veggie pizza appetizer that was all the rage at potlucks and pampered chef parties in the 90’s. Man, I loved that veggie pizza. This bagel is quick and easy to make, filling, and full of veggie goodness!
Southwest Egg Burritos
Breakfast burritos are so good! I love to make up a big batch, wrap them in plastic wrap and store in the fridge for the whole week. Just stick one in the microwave for a few seconds and enjoy it on-the-go. This Southwest Egg Burrito is just the right mix of southwest flavor goodness to start your morning off right!
Healthy Chocolate Cherry Muffins
Muffins are the perfect on-the-go breakfast. These Chocolate Cherry Muffins are like eating dessert for breakfast.
Make Ahead Sausage, Egg & Cheese Muffins
Muffins are great but sometimes you want something that packs a little more protein. That’s when I go for one of these Sausage, Egg & Cheese Muffins. They can be made ahead and stored in the fridge or freezer.
