Someone posted a recipe for Cheeseburger Casserole on a forum over at MJF last week. I thought the recipe sounded really good but I wanted to put my own twist on it. Here is what I came up with:
Cheeseburger Casserole
1.5 lbs. ground chuck
1 medium onion, finely chopped
4 0z. Velveeta cheese
1 can Cream of Mushroom Soup
1 Can Tomato Soup
2 tsp. mustard (I used Dijon)
Worcestershire Sauce
Garlic Powder
Salt
Pepper
Red Pepper Flakes
Potato Chips (stale ones work PERFECTLY)
Shredded Cheddar Cheese
8 oz. package of egg noodles
In a large pot bring 2 quarts of water to a boil. Salt water and cook egg noodles. Remove noodles when cooked and set aside. In a large skillet brown the finely chopped onion in a small amount of EVOO. When onion is brown and tender add the ground chuck. Stir with a wooded spoon to break up the meat. If there is a lot of fat you will want to drain the meat before adding additional ingredients. When the meat is cooked add Velveeta and both cans of soup. Mix until well incorporated. Add mustard and a splash of Worcestershire sauce. Add salt, pepper, garlic powder and red pepper to taste and stir well. Combine mixture with the cooked egg noodles and pour into a casserole dish. Lightly crush up several handfuls of potato chips and sprinkle on top. Sprinkle with a small amount of cheddar cheese (don’t over do it with the cheese on top or the chips wont crisp up). Place into a 350 oven and bake until cheese melts.
This casserole tastes JUST LIKE a cheeseburger and was SO good. My husband and my mother-in-law both thought it was excellent. I served it with baked french fries and a salad. We also had pickle spears on the side! YUMMY!!!
*Note – If you want baked french fries start these in the oven when you begin cooking and everything will be done at the same time.

Wow, I googled cheeseburger casserole and found this recipe. I usually use allrecipes.com but I couldn’t find anything that looked good. This recipe is very good. She is right it taste exactly like a cheeseburger. I have seven children and a husband so I doubled the recipe and my WHOLE family wanted seconds, “that is a rarety”. Thank you…
