We are all about camping, backyard cookouts, family picnics and enjoying the nice outdoor weather with our friends and family. Whether we’re camping as a family or hosting a huge backyard gathering these Easy Grilled Veggie and Smoked Sausage Foil Packs are one of our go-to meals. The ingredients can easily be adjusted to fit a crowd of any size.

Grilled Veggie and Smoked Sausage Foil Packs | Easy Camping Meal
*Ingredients are per person. Double triple, quadruple, etc. the recipe to fit your needs!
Preheat your grill to medium/high heat.
Ingredients
- 1/4 cup Italian Dressing or Garden Herb Veggie Marinade
- 1/2 yellow squash, cut in circles
- 1/2 zucchini squash, cut in circles
- 1/2 bell pepper, cubed
- 1-2 red potatoes, cubed
- 1/2 red onion, sliced in chunks
- 1/2 package Smoked Sausage, sliced in circles
Directions
Place the veggies in a large bowl with the marinade. Marinate veggies in the fridge for 2 hours to overnight.
Lay out a large piece of heavy-duty foil for each person.
Divide the veggies evenly between the foil.
Pour over any remaining marinade.
Add the sliced smoked sausage to each pile.
Fold the foil over and seal it tightly.
Grill the packets over medium heat for 15-25 minutes or until the veggies are tender with a slight bite. Flip and rotate the packs about every 5 minutes or so.
Remove from the grill and sprinkle with salt and pepper to taste before serving.
Cleanup is a breeze because you can cook and eat right out of the foil packets. When you are done just ball up the foil and toss it in the trash.
Serving Suggestions:
Leave the potatoes out of the packets and instead serve homemade potato salad. Baked beans also make a great side dish.
Serve up a delicious Arnold Palmer to go with your meal. Brew 1 gallon of tea and add 1 cup of sugar. Add 1 thawed container of frozen lemonade mix plus the amount of water specified on the lemonade package. Chill and serve in a tall glass with a straw.
Not cooking out? You can cook the same recipe in a 400-degree oven for 30-40 minutes. I usually slightly precook my potatoes by microwaving them for 3 minutes before adding to the veggie mix.
