One of my favorite parts of summer and summer vacation is TROPICAL DRINKS!  I love a good frozen drink with pineapple, coconut, strawberry, lime, and all the flavors of summer.  To me, no dessert is better in the summer than an icy cold flavored beverage.  I love to get out my blender and mix up all kinds of concoctions.  Some have alcohol and some don’t.  Some act more as a cocktail while others are more of a dessert and yet others are just a fancied up beverage you would drink with a meal.

Over the summer months (which are really from May to October here in Arkansas) I link to try my hand at mixing up a variety of summery drinks. 

This week I made a Coconut Watermelon Margarita.  This frosty beverage was a big hit not only with me but with my husband as well.  He loved it and even had two glasses!  To me, it was sweet yet refreshing and epitomized the tastes of summer. This drink was inspired by a recipe for a Watermelon Lime Frosty that I found on the gorgeous blog My Life in Food.

Coconut Watermelon Margarita

Make 4-5 8 oz. servings

5 oz. Bacardi Coconut Rum
1 – 10oz. Frozen Bacardi Mixers Non-alcoholic Margarita concentrate
Watermelon, cubed and frozen (I used about 1/4 of a medium to large watermelon)
1 Lime, cut into wedges
Salt

Pour 5 oz. of coconut rum into a blender.   Add one 10 oz. can of Frozen Bacardi Mixers Non-alcoholic Margarita concentrate.  Fill the remainder of the blender with frozen watermelon.  Blend until smooth and combined.

Wet the rim of 4 – 8 oz. cups with lime and salt the rims.  Add the blended mixture to the glasses and garnish with a wedge of lime.

  1. I am not normally a margarita fan, but I have to say – this is the BEST margarita I have ever had! It literally tastes like sorbet! Thank you so much for this recipe! This will be me and my husband’s “go to” drink from now on!

  2. I made these for the 4th and I have to say, it’s my new favorite drink!!! Thanks so much for sharing! I used sugar on the rim instead of salt because they are fruity, and I believe sugar tastes better with fruity margaritas. Give it a try next time!

    1. Michelle – I do love salt but someone told me you can buy watermelon sugar! I would love to try that! So glad you enjoyed the drink! Thanks for trying it!

    1. Karin – excellent question! You would have to experiment but I am thinking Cream of Coconut made by Coco Lopez would be a great substitute and should be available in most grocery stores. If you want something with a little less sugar you could try Coconut Water although since it is made solely from the water found in green coconut the coconut taste is VERY mild. Let me know what you come up with!

  3. Ok I have what I feel is a stupid question but I need to ask…did you pull the seeds out of the watermelon before you froze the cubes?

    1. Totally valid question! I used a “seedless” watermelon. They have tiny white/pale yellow seeds that are soft and edible. Once blended you never even know they are there. If you had a regular watermelon then YES I would remove the seeds!
