Cranberry Pistachio Energy Bites

No matter the time of year, it’s important to keep up your energy when you are physically active. These Cranberry Pistachio Energy Bites are packed with food fuel that will help power you through your hike or paddle.

A lot of people are thinking about physical activity in January but for many that activity is taking place in a gym. If that’s your style, GREAT! This recipe is still right up your alley but I prefer to get my exercise in the great outdoors. I am happiest in nature and you are more likely to catch me walking the trails behind my house than a rubber belt on a treadmill.

January is also the time when a lot of people are dieting. Diet and exercise do go hand in hand but you also have to be careful that you aren’t over-exercising and undereating. Your body will still need lots of fuel. In the colder months, your body has to work a little harder to regulate your temperature so you tend to burn calories more quickly.

So if you are headed out to the trails for a wonderful winter hike, you’re hitting the lake for some solitary paddling or your planning an ice-fishing expedition you need energy. These energy balls are loaded with things like fruit and maple syrup that will give you an initial burst of energy. They are also full of nuts, oats, and seeds that will burn slowly for longterm energy.

Cranberry Pistachio Energy Balls

Cranberry and Pistachio Energy Bites Recipe

Makes approximately 15 1” balls

Ingredients:

  • 1 cup dates
  • 1 cup dried cranberries
  • 1 cup shelled pistachios
  • 1/2 teaspoon sea salt
  • 1 teaspoon maple syrup
  • 1/2 cup honey
  • 1/4 cup chia seeds
  • 1/4 cup currants (or use your favorite dried fruit)
  • 1/2 cup packed brown sugar
  • 2 cups instant oats

Instructions:

  1. Add dates, cranberries and pistachios to the bowl of your food processor and pulse a few times to roughly chop.
  2. Transfer ingredients to a bowl and add salt, maple syrup and honey and mix well.
  3. Mix in chia seeds, currants and brown sugar.
  4. Add in the oats and mix very well with a sturdy spoon or with your hands.
  5. Place the bowl into the fridge for about an hour to firm up the mixture. This makes rolling it into balls much easier.
  6. Using a small scoop, scoop out the mixture and roll into 1” balls. Store in an airtight container in the fridge for up to 2 weeks or for up to 3 months in the freezer.

  • 1/4 cup currants or use your favorite dried fruit
  • 1/2 cup packed brown sugar
  • 2 cups instant oats

  1. Help! my mixture is not clumping! I followed the recipe and left it in the fridge for over an hour and its not staying in a ball 🙁

    1. Hey Vanessa,
      Is it too dry? Can you tell me a little bit more about whats happening? It’s a chunky mixture but I haven’t had the same problem and we make this recipe quite often.
