This easy homemade butter pecan granola is crunchy, slightly sweet and oh, so good! It’s easy to make and it will soon be your new favorite granola recipe.

Granola can be full of fiber and iron. It often has nuts and seeds which contain heart-healthy unsaturated fats and the nuts can add protein which helps boost energy. Granola is portable and keeps well in a sealed container or bag so it is a popular food for hiking and camping. Unfortunately, store-bought granolas can be loaded with sugar, salt, and other unnecessary ingredients. That’s why I like to make my own granola.

I’ve enjoyed granola my whole life but one experience really sticks in my mind.

We had traveled to Alaska for spring break. It was SO cold and snowy and absolutely wonderful. The whole trip was one of the most memorable of my life including a breakfast we had one morning. I can’t recall the restaurant and I’m not even sure what town we were in but there was a tiny cafe near the base of a ski resort. Several inches of snow had fallen that night and we were getting ready to do some winter hiking and stopped in the cafe before we met our guide. On the counter sat a large glass jar full of the yummiest looking granola I had ever seen. It was made in house and they served it with milk or sprinkled over a bowl of yogurt. I chose the yogurt which turned out to be the silkiest, smoothest vanilla yogurt I had ever had.

When we returned home I often reflected on that bowl of yogurt and granola with fondness and still do almost 15 years later!

I made it my mission to create a granola recipe that compared to what I ate that morning and this Butter Pecan Granola has been my go-to recipe ever since.

Granola for hiking

Easy Homemade Butter Pecan Granola

Ingredients

  • 2 1/2 cups old-fashioned oats
  • 1 cup shredded coconut
  • 3/4 cup pecans – chopped
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup butter
  • 1/2 cup maple syrup
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Directions

  1. Preheat your oven to 325°.
  2. Combine the oats, coconut, pecans, sugar, and cinnamon in a bowl.
  3. Melt the butter in a small saucepan.
  4. Remove from the heat and stir in the maple syrup, salt, and vanilla.
  5. Pour over the oat mixture and stir to mix well.
  6. Spread the mixture onto a baking sheet and place into the oven.
  7. Cook 30 minutes or until everything is an even, golden color.
  8. Stir every 10 minutes and be careful not to burn the nuts.

Notes: Store the cooled granola in an airtight container like a mason jar.
