Cucumber Tomato Salad

It is tomato and cucumber season here in Arkansas. I made this beautiful salad to go with our lunch the other day.

Julie’s Cucumber Tomato Salad

2 Large Cucumbers, peeled and sliced thin
2 medium or 1 large fresh tomatoes
1/4 of a large red onion, slices
1/2 cup white vinegar
1/4 cup water
1/4 plus 1/8 cup of sugar
chopped fresh dill, to taste
kosher salt and pepper, to taste

Peel and thinly slice two large cucumbers and add to a bowl.  Chop the tomatoes and slice the onions and add.  Add all remaining ingredients and stir to combine.  Refrigerate for at least 30 minutes before serving.
