Gourmet-style burgers have been trending for several years now and I don’t think the trend is going away anytime soon. We have always been pretty traditional when cooking burgers at home. Sauteing up some onion or mushrooms was about as crazy as it got. Lately, we’ve been trying to spice it up a little.
Tacos and Fajitas are probably our favorite foods. We have one or the other at least once a week. One evening we had a bunch of leftover peppers and onions from our fajitas. I had burgers planned for the next evening and began thinking how I could incorporate the two and the idea for Fajita Burgers was born.
I took the concept a step further and used some of my favorite Tomatillo Ranch dressing to make an Avocado Cream sauce to top the burgers. We also added some Crispy Jalapenos to really spice them up a bit.
The best part is these burgers pack a punch of flavor and are still pretty simple to make.
Fajita Burgers with Avocado Cream and Crispy Jalapenos
1 Pound Ground Chuck
2 Teaspoons Fajita or Taco Seasoning
1 Onion, halved and sliced in thick slices
1 red pepper, cored and sliced
1 tablespoon olive oil
Lettuce
4 slices pepper jack cheese
Crispy Jalapenos
1 Avocado
1/2 cup Tomatillo Ranch Dressing
4 hamburger buns
In a medium to large skillet, heat 1 tablespoon of olive oil. Add the onions and red peppers and saute until they become tender. Set aside.
To make the avocado cream, halve the avocado and remove the pit. Scoop the avocado into a food processor and puree. Add the tomatillo ranch dressing and pure until smooth. Set aside.
In a medium bowl, mix ground chuck and fajita seasoning until well combined. Form into four patties and grill to your desired doneness. Top each cooked patty with a slice of pepper jack cheese.
Place each burger on a bun. Top with lettuce, a scoop of onions and peppers, crispy jalapenos and spread a generous helping of Avocado Cream onto the top bun.
Serve with homemade baked fries or chips and salsa.
