When it comes to camp cooking, I look for meals that are quick, tasty, and filling and that require minimal effort when I get to the campground. These Grilled Chicken Fajitas can be prepped before you head to the campsite and cooked quickly when you arrive.

What Are Chicken Fajitas?

Chicken Fajitas are a traditional Mexican dish that consists of marinated chicken and sauteed onions and bell peppers. They are usually served on flour tortillas with the option of adding cilantro, avocado, cheese, or your other favorite toppings. Since they are quick-cooking and can be prepped in advance, fajitas are the perfect camping meal.

How To Prep Fajitas for Camp Cooking

A lot of fajita recipes will tell you to start your chicken before the veggies, but that’s really not necessary and definitely a step worth skipping when you’re at the campground. Since I like to cook everything together, it makes prep work a breeze. Simply slice your chicken and veggies in advance and add them to a freezer bag along with the marinade and toss the whole thing in the freezer. When you head out to camp, toss the frozen bag in the cooler or RV fridge and let it defrost before cooking.

How to Slice Chicken for Fajitas

I like to slice my fajita chicken into paper-thin pieces. This allows them to cook quickly and stay tender. The best way to do this is to begin with a partially frozen chicken breast. Just use a sharp chef’s knife and slice away.

Can I Use Steak Instead of Chicken

Steak fajitas are also a favorite, and you can certainly substitute steak for the chicken in this recipe. Just be aware that even though we are cooking these quickly, the method may result in steak being more on the well-done side.

What Grilling Tools Do I Need

For this fajita recipe, the chicken, peppers, and onions are cut into smaller pieces. For that reason, you can not cook these directly on a standard grill grate. We recommend using a grill basket, or if you have a Coleman RoadTrip X-Cursion like we do, you can just swap out one of your grill panels for the cast iron griddle.  Other than that, a set of long-handled tongs are really all you need.

Grilled Chicken Fajitas

Ingredients

For the marinade:

1/4 cup olive oil
2 limes – zest and juice
1/2 cup fresh cilantro, chopped
3 cloves garlic, grated on a Microplane
1/2 tsp. oregano
1/2 tsp. onion powder
1/2 tsp. chili powder
1/4 tsp. cumin
1 tsp. salt
1/2 tsp. ground black pepper
crushed red pepper, to taste (optional)

For the chicken:

1 1/2 – 2 pounds chicken breast
1 medium onion
1 medium bell pepper, any color

Instructions

Combine all of the ingredients for the marinade in a large zip-top plastic bag. Slice the onion and bell pepper into bite-sized chunks or strips. Slice the chicken into paper-thin slices. Add the meat and veggies to the bag and seal. Shake or mush the bag to coat all of the chicken and veggies in the marinade. If you are planning to use the meat right away, marinate for at least thirty minutes before cooking. For camping prep, toss the bag into the freezer and pack the frozen meat and veggies into your cooler or fridge when you leave for the campground. The meat will thaw in about 12 to 18 hours and makes a perfect day 2 meal for camping.

When you are ready to cook preheat the grill to medium-high heat, then simply toss the thawed ingredients into a grill basket or onto the cast iron griddle attachment of your Coleman RoadTrip X-Cursion and cook until the chicken is cooked through. Wrap your tortillas in foil and warm them on the other side of the grill while the chicken cooks.
