It doesn’t matter if we’re camping or just grilling out in our backyard, chicken sandwiches are one of my favorite summertime meals. Chicken cooks quickly and by varying toppings and condiments you can create a brand new meal each week. These Hawaiian Chicken Sandwiched with Teriyaki Ginger Mayo are so good that I sometimes dream about them. There is always leftover Teriyaki Ginger Mayo and I have been known to smear it on a piece of bread as a snack.
These sandwiches are pretty easy to make and are so full of flavor. We love to make these for backyard gatherings as you can easily adjust the recipe to fit a crowd. You’ll want to keep a batch of the Teriyaki Ginger Mayo on hand all summer long.

Hawaiian Chicken Sandwiches with Teriyaki Ginger Mayo
INGREDIENTS for 8 Sandwiches
•4 Chicken breasts
• 1/4 cup teriyaki sauce
• freshly grated ginger
• one clove Garlic, grates
• 8 hamburger buns
• 8 Pineapple Rings
• Thinly sliced red onion
• Thinly sliced jalapeños
• chopped cilantro
• Teriyaki ginger mayo (recipe below)
DIRECTIONS
In a medium bowl, combine Teriyaki sauce, grated garlic, and grated ginger.
Butterfly your chicken breasts into two pieces & flatten to even thickness with meat mallet.
Add chicken to the marinade and refrigerate for at least 2 hours and up to overnight. Rotate chicken every few hours.
Preheat your grill to medium-high heat.
Pepper the chicken and grill the chicken until it is cooked through.
Grill the pineapple until warm.
Spread the buns with Teriyaki Ginger mayo.
Add your chicken and top with grilled pineapple, onion, jalapeño and cilantro.
Enjoy with fries or chips.
Teriyaki Ginger Mayo
• 1 cup real mayonnaise
• freshly grated ginger
• 3 Tablespoons Teriyaki sauce
• zest and juice of half a lime
• freshly ground black pepper
Whisk all ingredients together and refrigerate a minimum of 2 hours.
