Leftover Loaded Potato {Brown Bag Lunch}
Baked potatoes are a great choice for lunch. They are quick and easy to prepare and as long as you don’t eat one loaded with butter every day, they can be a healthy choice too. Baked potatoes are also great for jazzing up leftovers.
1 baking potato
Leftover meat and veggies
Cheese
Butter and/or sour cream, optional
Microwave your potato for 6-8 minutes until tender. Cut open and fluff with a fork. Add leftover meat and veggies, sprinkle with cheese and microwave 1-2 minutes more to heat meat and veggies and melt the cheese. Serve with butter and sour cream if desired.
