It is possible to make really great food on a budget! This meal is quick, simple, filling and inexpensive. In fact, it has become a house favorite and we eat it about once every two weeks.
Assuming that all you have on hand is oil and salt and pepper this meal only costs about $7.50 to prepare. You will have rice, eggs and green onions remaining which can be used for another meal later in the week.
Pinto Beans and Rice with Fried Eggs
Feeds 4 or 2 with leftovers
2 cans Pinto Beans {.99 each}
1/2 tbsp butter or oil
1/4 of a medium onion diced {about .50 for the whole onion}
1 jalepeno, seeded and chopped {about .50}
Salt and pepper to taste
4 Fried eggs (optional) {about 2.00 per dozen}
Chopped Green Onion (optional) {.99 cents a bunch}
Prepared Rice {1.50 for a 32oz bag}
Cook and prepare the rice according to the package directions. In a medium sauce pan heat butter or oil. Add diced onion and jalepeno. Cook over medium low heat until they just begin to soften. Add 2 cans of pinto beans and salt and pepper to taste. Add 1 1/2 cups of water and simmer for 10 – 15 minutes. To serve, scoop about 3/4 cup of rice into four bowls. Ladle the beans over the rice. Top each bowl with a fried egg cooked to each persons desired level of doneness. Garnish with sliced green onion. Enjoy!
I just looked at a can of pinto beans in the cupboard and wondered what to do with them. Also-Thom just put on a pot of rice on the cooker to make some breakfast rice. I think it’s fate that i clicked on over at this moment. I’m so hungry. This is dinner tonight!
