I have always enjoyed giving handmade gifts. Whether I make something crafty, something useful or something tasty I feel a handmade gift shows how much I love or appreciate someone more than anything I can purchase in a store. My mother-in-law often brags about my cooking and always tells her friends how good I am in the kitchen. When she celebrated her birthday a few weeks ago I decided to make her a special birthday brunch. I made baked eggs with herbs (you can find the recipe on my friend Beth’s blog, The Food Adventuress), sausage links and toast with homemade strawberry freezer jam and to make it even more special I made this fabulous Sunny Mock Sangira!
Sunny Mock Sangria {Drink of the Week}
1 bottle of Sparkling Cider (non-alcoholic)
1 12oz. can of Mango Nectar
1 12oz. can of Pineapple Juice
Juice and zest of one lime
1 Green Apple, sliced
1 lemon, slices
1 additional lime, sliced
1 orange, sliced
Fresh mint
Slice the fresh fruit and add to a glass pitcher. Zest a lime and add the zest and the juice to the pitcher. Add several sprigs of fresh mint. Pour in the sparkling cider, mango nectar, and pineapple juice and stir slightly to combine. You should refrigerate this at least one hour before serving but you can make it the night before. To serve scoop some of the fruit into each glass and then fill with the Sunny Mock Sangria. Garnish each glass with a piece of fresh mint. Enjoy!
