The Best BBQ Ribs You Will Ever Eat

On the 4th of July I came across a recipe for BBQ ribs on the blog Mindless Wanderings which is written by a girl I met at a blogging conference back in June.  I made the recipe that day and Richie LOVED the ribs.  In fact, we both loved them so much that we habe made them several more times since them.  I made a few minor changes to Jody’s recipe to suit our tastes better but hers are still great just the way they are.

The Best BBQ Ribs You Will Ever Eat

1 Full Rack of Pork Baby Back Ribs
1 Can or bottle of beer (I have tried both Bud Light Lime and Heineken Light)
Montreal Seasoning
Sweet Baby Rays BBQ Sauce (Seriously this sauce is AMAZING!)

Preheat your oven to 250 degrees.  Begin by removing the ‘silver skin’ membrane from the back of your ribs.  If you use a butch you can ask them to remove it for you. (We don’t have “real” butchers around here!)  Removing this will really improve the tenderness of your ribs and is a step not worth skipping.  Generously season both sides of the ribs with Montreal Seasoning.  The seasoning contains both salt and pepper so you do not need to add them.  Place the rack of ribs into a large baking dish.  Pour the beer into the baking dish. (Don’t forget to take a few swigs for yourself! I wont tell!)  Cover the dish tightly with aluminum foil and place it in the 250 degree oven for 2-3 hours, the longer the better.  Remove ribs from the oven and pour off the beer and brush both sides with BBQ sauce. Re-cover and return to the oven for 1 additional hour.  Preheat your gas or charcoal grill.  We use charcoal.  Remove the ribs from the oven.  Brush both sides with more barbecue sauce and place ribs on the grill until the sauce caramelizes. (You can do this in the oven, under the broiler,  if you do not have a grill.)

We like to eat the ribs with baked beans, grilled corn and grilled hobo potatoes. YUM!  And since you have the grill hot, why not make s’mores for dessert!  ENJOY!
