Cast Iron Skillet Roasted Chicken

Cast Iron Skillet Roasted chicken is so simple and easy to make, I should probably be making it at least twice a month. Yet for some reason, I often forget about this delicious dish. 

Roasting a chicken is quick and simple enough that you can actually pull it off on a weeknight. Even a busy one. Plus, if you plan well, you can reuse the leftovers in other recipes later in the week.  Cook once, eat twice (or even three times)? Sounds perfect to me.

My cast iron skillet comes in handy when cooking this recipe. It can go from the stovetop to the oven, to the dinner table. Fewer dishes, less mess, less cleanup!

Cast Iron Skillet Roasted Chicken 

Ingredients

One Whole Chicken, 5-6 pounds
4 Tbsp. Butter, melted
Poultry Seasoning (I used Penzy’s Northwoods Seasoning)
Cast Iron Skillet (or any oven-proof skillet)

Directions 

Place your cast iron skillet inside your oven and preheat both the oven and the skillet to 450 degrees.

Rinse your chicken and pat it dry with paper towels.

When the oven has reached temperature place 1 Tbsp. of melted butter into the skillet.  Carefully transfer your chicken to the skillet, placing it breast side up.  Pour the remaining butter over the chicken and sprinkle with your favorite seasoning.

Close the oven and walk away! It really is that simple.  The chicken will be ready in about 45 minutes or when the temperature at the thickest part of the thigh reaches 165 degrees.

Allow the chicken to rest 15-20 minutes before serving with your favorite sides.

Upon finishing the meal, remove all of the meat from the carcass for later use. You can also use the carcass to make delicious stock. 

Note: Roasted Potatoes, Hunter’s Carrots, a green vegetable and some Sister Schubert’s rolls are the perfect accompaniments to this weeknight meal.
